Recipe of the Month



Thumbprint Cookies
3/4 cups of butter, softened (1 1/2 sticks)
1 3/4 cups all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1/3 cup assorted jams (for filling cookies)

Preheat oven to 350 degrees and line baking sheet with
parchment, and salt
In another bowl. beat butter and sugar until fluffy, about
3 minutes.  Beat in egg and vanilla, then add dry ingredients in
two batches until all incorporated.
Using a small cookie scoop, scoop one inch balls onto
prepared baking sheet.  Press a thumbprint into center of each
​ball, 1/2 inch deep.  Fill with a small spoonful of jam.
Bake until edges of cookies are golden, 13-15 minutes.
Cool on baking sheets.
