Potato Chip Chocolate Chip Cookies
2 sticks butter softened
1/2 cup brown sugar
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup semisweet chocolate chips
2 cups crushed potato chips
2 cups crushed potato chips for rolling cookie balls
Preheat the oven to 375 degrees
Line 2 baking sheets with parchment paper.
In a bowl, cream together the butter, granulated sugar and brown sugar on
medium-high speed until light and fluffy, 3-6 minutes. Add the vanilla
and eggs and beat on medium speed until combined. Add the flour, baking
soda and salt, then mix on low speed until just combined. Stir
in the chocolate chips and 2 cups of the crushed potato chips. Put
the remaining 2 cups into a shallow bowl for rolling the balls.
Roll the dough into 2-inch balls, then roll them in the remaining potato chips
so they are completely coated. Place the cookies 2 inches apart on the
prepared baking sheets and bake until golden brown - 12-to 15 minutes.
Let cool for 5 minutes, then transfer to wire rack to cool completely.
